I know I have been slacking with my posts, but I guess marathon training and some other life events have taken their toll on my multi-tasking skills. Well, Autumn is upon us in just a few days, so you know what that means… Slow-cooker meals! These are some of my favorite meals to make because it really requires very few steps. I will be posting some of my favorite slow-cooker recipes that I’ve tried and perfected over time. I’m sure if you do a Google search on any one of these recipes, you will find different variations of them, but I am sharing the ones that I’ve adapted to my personal taste and to those who have willingly been my taste test guinea pigs. Ha!Anyway, give this recipe a try and let me know how much you enjoyed this hearty meal!

Makes six (6) 1-3/4 c. servings

2 pounds beef stew meat, cut into 1 inch cubes

Seasoned salt

Fresh cracked black pepper

Paprika (preferably smoked)

Trader Joe’s 21 Seasoning Salute (or another no-salt seasoning blend)

1/4 cup all-purpose or gluten-free flour

2-4 cloves garlic, minced

1 bay leaf

2 tbsp Worcestershire sauce

2 cups beef broth

3-4 gold potatoes, diced

1 medium onion, chopped

4 carrots, sliced into coins

2 stalks celery, chopped

  1. Clean and season meat with the salt, pepper, paprika, and no-salt seasoning in a large bowl. (I personally like getting the packages of lean stew beef from Trader Joe’s because they are already in bite-sized pieces.) Put the seasoned meat in a ziploc bag, add flour and toss to coat.
  2. Place meat in slow cooker.  Stir in the garlic, bay leaf, Worcestershire sauce, beef broth, onion, potatoes, carrots, and celery.
  3. Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.
